Whether you’re heading to work, dropping children at school, running between appointments or simply trying to avoid reaching for processed convenience foods, this slice has you covered.

Every ingredient has been selected to support steady energy production, healthy blood sugar balance, gut health and optimal cellular function. Rich in colourful vegetables, quality protein and healthy fats, it’s one of my favourite examples of using food as medicine in everyday life.

Ingredients

Protein

8 free-range eggs ★

1 cup cottage cheese ( Higher Histamine)

OR

1 cup fresh ricotta (lower histamine alternative)

Slow Release Carbohydrates

1 cup cooked quinoa ★

(Provides complete plant protein, fibre and sustained energy.)

Vegetables

2 medium zucchini, grated ★

2 carrots, grated ★

1 cup finely chopped broccoli ★

1 cup baby spinach ( Higher Histamine)

OR

1 cup finely shredded kale ★ (great lower histamine alternative)

1 small brown onion, finely diced ★

2 cloves garlic, crushed ★

Healthy Fats

2 tablespoons extra virgin olive oil ★

Seeds

½ cup pumpkin seeds ★

2 tablespoons chia seeds ★

Fresh Herbs

2 tablespoons chopped parsley ★

1 tablespoon fresh rosemary, finely chopped ★

1 tablespoon fresh thyme

Flavour

1 teaspoon turmeric ★

1 teaspoon smoked paprika

½ teaspoon black pepper

Sea salt to taste

Optional Extras

Choose one if you like.

  • 100 g crumbled feta (Higher Histamine)
  • 150 g cooked shredded chicken ★
  • 150 g cooked salmon ★(freshly cooked; avoid smoked salmon if histamine sensitive Higher Histamine)
  • ½ cup cooked lentils ★

Method

Preheat your oven to 180°C (fan-forced 160°C).

Line a large slice tin with baking paper.

Grate the zucchini and carrots, then gently squeeze out any excess moisture using a clean tea towel.

In a large bowl whisk together the eggs, cottage cheese (or ricotta) and olive oil until well combined.

Stir through the quinoa, vegetables, herbs, garlic, spices and seeds.

Fold through your chosen optional protein if using.

Pour the mixture into the prepared tin and smooth the surface.

Bake for 35–40 minutes, or until golden on top and firm in the centre.

Allow to cool completely before cutting into twelve squares.

Histamine Notes

For many people these foods are wonderfully nourishing. However, if you are experiencing eczema, hives, rosacea, flushing, headaches, sinus congestion or other symptoms associated with heightened histamine activity, consider the following temporary adjustments.

Foods marked ( Higher Histamine)

  • Cottage cheese
  • Feta
  • Spinach
  • Leftover salmon (eat freshly cooked or freeze portions immediately)
  • Any leftovers left in the refrigerator beyond 3–4 days

Lower Histamine Swaps

✓ Ricotta instead of cottage cheese

✓ Kale instead of spinach

✓ Fresh chicken instead of salmon

✓ Omit feta

✓ Freeze individual slices on the day they are made and thaw overnight as needed.

Remember, these are temporary adjustments for those experiencing histamine flare-ups while we work on calming the underlying drivers. They are not lifelong restrictions for most people.

Use what you already have in your fridge.

Instead of zucchini → grated cauliflower or broccoli.

Instead of carrots → pumpkin or sweet potato.

Instead of kale → silverbeet.

Instead of quinoa → cooked brown rice or buckwheat.

Instead of chicken → cooked lentils or chickpeas.

Fresh herbs can be mixed and matched with parsley, basil, oregano, thyme or chives.

The goal isn’t perfection—it’s creating a colourful, nourishing meal that supports your body with real food.

Pack It for Busy Days

Pair one slice with:

  • A handful of cherry tomatoes (Histamine for some people)or cucumber and carrot sticks.
  • A small green salad dressed with extra virgin olive oil.
  • A piece of fruit such as an apple or pear.
  • A handful of raw almonds or walnuts.

Together, this creates a balanced meal containing protein, healthy fats, fibre and slow-release carbohydrates to help keep your energy steady throughout the afternoon.
