Ingredients:
- 1 cup fresh blackberries, chopped
- 1 cup shredded coconut (unsweetened)
- 1/2 cup almonds (or almond meal)
- 1/4 cup coconut flour
- 2 tablespoons coconut oil (melted)
- 1-2 tablespoons maple syrup or honey (adjust to taste)
- A pinch of sea salt
- 1/3 cup dried cranberries (make sure they are low-sulphur and preservative-free)
- Coatings: Freeze dried raspberry powder and/or freeze dried raspberry crumbs; moringa leaf powder; and unsweetened shredded coconut.
Instructions:
- Prepare the Ingredients:
- Wash blackberries.
- In a food processor, combine the blackberries, shredded coconut, almonds (or almond meal), coconut flour, melted coconut oil, maple syrup and a pinch of sea salt.
- Blend the Mixture:
- Process the mixture until it forms a sticky dough. If it’s too dry, you can add a bit more melted coconut oil.
- Add Cranberries:
- Add the dried cranberries to the mixture and pulse until they are well distributed.
- Check the Consistency:
- Test the mixture by taking a small amount and rolling it into a ball. If it holds its shape, the consistency is right.
- Shape into Balls:
- Scoop out small portions of the mixture and roll them into bite-sized balls.
- Coating:
- Have fun rolling the bliss bites in your chosen coatings.
- Chill:
- Place the bliss bites on a tray lined with parchment paper and refrigerate for at least 30 minutes to allow them to firm up.
- Serve and Enjoy:
- Once chilled, your Snowberry Bliss Bites are ready to be enjoyed.
