- Stir occasionally, being careful not to overcook the fruits.
- Remove from heat and allow to cool.
- When cooled, remove cinnamon stick and place the stewed fruit in refrigerator to become cold.
- Place the coconut cream in a small bowl and beat until light and fluffy. The cream must be extra cold for this step.
